SUADERO TACOS / TACOS DE SUADERO

INGREDIENTS:

  • 4.5 LB or 2 Kg of Suadero
  • 1 liter of cow's milk
  • 3 bay leaves
  • 7 whole black peppers
  • 2 cloves of garlic
  • ½ large onion or medium onion
  • ½ cup of oil
  • For the Tacos:
  • ½ chopped white onion
  • 1 coriander bouquet
  • Your favorite sauce
  • Lemons broken into quarters
  • Tortillas preferably small in size

NSTRUCTIONS
Preferably marinate the meat overnight. Minimum is three hours.
Preparation of the Suadero:
Grind the meat - slit the length and width of the meat without breaking it into pieces, place it in a bowl and protect
Blend the milk, garlic, onion and pepper until all the ingredients are perfectly integrated and you have formed a kind of onion smoothie.
Add the onion smoothie to the bowl (container) where you have the meat, add the bay leaves, cover the bowl, place it in the refrigerator and leave it to marinate for a minimum of three hours, preferably let the marinade marinate overnight between ten and fourteen hours
Once the marinade has been marinated, drain it well and cut it into small pieces, divide your meat in two and protect.
In a large skillet or saucepan previously heated over medium heat, pour ½ cup of oil, let it heat for a minute, add half of the softener little by little and reduce the flame to medium heat, cook the softener until it is lightly browned and safeguards. Repeat the process with the other half of Suadero.
